Cheesy Peri-Peri Chicken & Chorizo Pasta
Looking for a new kind of pasta dish to try rather than the usual go to pastas? Then I seriously recommend treating yourself and giving this dish a try, especially if your a lover of cheese! I enjoy making this pasta as it is so easy and quick to make and tastes delicious. I got the idea after I had eaten a similar pasta dish whilst I was on holiday in New York over Christmas. It was a pasta dish that I hadn't come across in the UK and the various Italian restaurants I have visited, so I decided to give it a try and make my own.
Serves 2:

Ingredients:
2tbsp Olive oil
2 Cloves of garlic (finely chopped)
100g Chorizo sausage (cooked, sliced)
2 Chicken breasts (thinly sliced into strips)
1 tbsp Peri-Peri seasoning (I use Nando's medium spiced)
300ml Double cream
200g Penne pasta
75g Parmesan cheese
6g Fresh parsley (extra to garish)
Method:
Step 1:
Fill a medium sized pan with water and a pinch of salt; and bring to the boil. Add the pasta and cook for around 10 - 12 minutes.
Step 2:
Whilst the pasta is cooking; In a large pan, heat the olive oil and add the garlic, chicken and sausage, and cook until the chicken starts to brown and is no longer pink in colour.
Step 3:
Add the peri-peri seasoning to the pan and stir the contents until there is a consistent covering of peri-peri over the chicken and sausage.
Step 4:
Add the cream to the pan and slowly bring to the boil, making sure to continously stir the mixture to prevent the cream from burning to the bottom of the pan.
Step 5:
Remove the pasta from the heat and drain the water away. Add the cooked pasta to the larger pan and stir thoroughly to combine all the flavours together.
Step 6:
Add the parmesan cheese and parsley and stir well until the cheese melts and the sauce thickens. Depending on how you want the consistency of the sauce, you can add more cream to make the sauce thinner and more creamier or add more parmesan cheese to make the sauce thinker and have a more cheesier taste to it.
Step 7:
Now it's ready to enjoy! Serve in a bowl with a sprinkling of fresh parsley and black pepper on top.
