Malteser Cheesecake
This Malteser cheesecake is one of my go to desserts when catering for a number of people. Perfect for any party or family occasion. It's quick and simple to make with a small number of ingredients, no baking required and can be completed in just a few steps. You can't go wrong combining a classic dessert with everyones favourite chocolate treat! For The Love Of Food recommends serving with a side of ice cream or cream over the top.
Serves 8 - 10:

Ingredients:
75g Unsalted butter
175g Milk chocolate digestive biscuits
400g Cream cheese (Philadelphia)
100g Icing sugar (sifted)
1/2tsp Vanilla extract
300ml Double cream
150g Maltesers (crushed)
Extra Maltesers for decoration
Method:
The Base
Step 1:
Crush the digestive biscuits in a plastic sandwich bag using a rolling pin until the biscuits reduce to crumbs.
Step 2:
Melt the butter in a small saucepan and remove from the heat once melted. Allow to cool for a second and then add the crushed biscuits; stirring until the butter covers all the biscuit crumbs.
Step 3:
Spoon the mixture into a springform cake tin and compact it to the base of the tin with the back of the spoon. Set aside for later.
The Topping
Step 4:
Add the cream cheese, icing sugar and vanilla extract to a bowl and beat together until they are all combined.
Step 5:
In a separate bowl, whisk the double cream until peaks start to form on the top. Add the whisked cream to the cream cheese mixture and fold together while gradually adding the crushed Maltesers to the mixture.
Step 6:
Spoon the mixture into the springform cake tin and cover the biscuit base entirely making sure to push the mixture evenly around all the sides. Tap the tin on the worktop to remove any air pockets in the mixture and decorate the top with extra Maltesers. Place the tin in the fridge for around 2 hours to allow the cheesecake to set.
Step 7:
After 2 hours, release the base of the tin and place the cheesecake on a serving plate. It's now yours to enjoy!
