Quick & Easy Thai Stir-Fry

Chilli & ginger stir-fried broccoli & pac choi with chicken and rice
This dish is perfect when your after a delicious, healthy meal that's going to be prepared, cooked and sat on the table all within 30 minutes, removing the stress of preparing difficult meals after a long day. The vegetables stir-fried in fresh chili and ginger certainly takes the dish to another level and is bound to leave you, and your appetite very satisfied. This dish is one of my favourites and regular weekly meal in my house!

Serves 2
Ingredients:
1 tbsp Vegetable oil
1 tbsp Toasted sesame oil
2 Chicken breasts
100g Basmati rice
100g Tendereste broccoli (stalks trimmed)
100g Pak Choi (leaves separated)
1 Garlic clove (thinly sliced)
1/4 - 1/2 Red chilli (finely chopped)
1 tbsp Ginger (finely shredded)
1 tbsp Soy sauce
Salt & pepper
Method:
Step 1:
Butterfly the chicken breasts and chop into small strips. Add a small amount of oil to a wok on a medium to high heat and add the chicken seasoned with salt & pepper; frying for around 8 mins until the chicken has browned and cooked through. Remove the chicken from the wok and set aside to be added again at a later point. Boil the broccoli at the same time to cook and soften.
Step 2:
Rinse and drain 100g of basmati rice with cold water before adding to a pan with water in the ration of 2 measures to 1 measure of rice. Bring the rice to the boil and simmer for 10 minutes.
Step 3:
While the rice is cooking, heat the vegetable oil and sesame oil together in the wok and then add the tender stem broccoli and stir-fry it on a high heat for about 3 minutes .
Step 4:
To the wok, add the garlic, chilli and ginger; then stir-fry for another 2 minutes. Add the pak choi leaves and the soy sauce and stir-fry all together for another 2-3 minutes until the pak choi leaves begin to wilt slightly. Add the chicken back into the wok and stir together for 2 minutes.
Step 5:
Remove the wok from the heat. Add the rice to the serving bowls and place the stir-fry on top. Finish with a little extra soy sauce over the top and enjoy!
